We share the same reverence for the Toro as they do in Spain and pay homage to our western cattle culture thatā€™s rooted deep in Spanish history. We invite you to peruse our menu, which draws inspiration from Spanish traditions new and old, celebrating many offerings from the land and sea.Ā

Culinarily, Spain is filled with a diverse history, serving as a cultural melting pot of the Mediterranean and northern Africa. The Spanish trade routes provided influences from all over the globe and a strong connection to the land from the culinary foundation of Spain ā€“ from small tapas bars to Michelin star restaurants.Ā

Regenerative ranching isnā€™t a new concept. In fact, itā€™s getting back to the balanced systems mother earth intended. It means that you let a cow be a cow on the land and move about in a natural longer life cycle, replenishing the soil with much needed nutrients.

While we take pride in our sustainably-sourced seafood and vegetables, the focal point of our restaurant is the dry-aged display case located in our dining room. We encourage our patrons to experience our bone-in ribeyes and NY strips. Our artisanal aging process concentrates the flavor and brings out the true taste of the beef.Ā

Why a Spanish-inspired chophouse in Boulder, Colorado?

Well, why not?Ā 

While our cattle history is always portrayed as ā€œAmericanā€, it actually points all the way back to the Iberian Peninsula. The Spanish are to thank for our strong horse and cattle culture in the American West. And not only is Colorado home to a strong ranching community, we also host the annual National Western Stock Show in Denver, one of the biggest in the country.Ā
