Jax Fish House is a high-energy, non-traditional fish house with an East Coast meets New Orleans vibe and seasoned service. As the first Monterey Bay Aquarium Seafood Watch certified restaurant in Colorado, we specialize in jet-fresh sustainably sourced seafood, including everything from raw oysters to seasonally composed plates. Executive Chef Sheila Lucero works tirelessly with organizations such as the Monterey Bay, The Blue Ocean Institute, Fish Choice, and the James Beard Foundation’s Smart Catch to ensure that all of Jax Fish House’s seafood is sustainably sourced.
