Samuel McCandless of Corrida

Samuel McCandless of CorridaSamuel McCandless, born and raised in Montana, discovered his love for food during summers in Redwood City, California, cooking with his grandparents. After high school, he began his culinary journey at Bistro Enzo in Billings, Montana. Over the next decade, he worked in some of the nation’s top fine dining restaurants, including Frasca Food and Wine in Boulder and L2O in Chicago. In 2010, he returned to Boulder to be closer to family, eventually becoming executive chef and partner of Corrida, C Burger, and The Colorado Club. Outside the kitchen, McCandless prioritizes family, health, and exploring the outdoors.

Samuel's Perfect Day in Boulder

  • I always start my day with a coffee at Beleza — it's the perfect spot to ease into the morning. My usual order is a drip coffee if it's cold, and an iced coffee when it's hot.
  • After that, I head to One Boulder Fitness for a workout. There's something grounding about lifting weights — it allows me to clear my mind and fuels me with energy for the rest of the day.
  • A quick stop to Dry Storage is a must. Their breads are amazing and made with their own milled heirloom grains – and the smoked trout onigiri are simple, fresh and always satisfying. I never leave without the chocolate chip cookie.

  • In the afternoon, I'll take a quick hike up Anemone Trail. The views and fresh air are a great way to recharge.

  • Spending time with my daughter is the highlight of my day. We'll usually stop by Pekoe Tea House so she can grab her favorite tea – it's a nice way to slow down and connect.
  • Later, we'll treat ourselves to dinner Corrida, or head over to one of our other local favorites, Basta.
